Koekkruiden (English: cookie spices) is the dutch name of a specific mix of spices used to make cookies. Though it is called koekkruiden, I find this spice mix can be used for much more than just cookies.
I personally don’t like buying pre-mixed spices because I prefer having control over the flavor profile of the mixes I use. In addition, store-bought koekkruiden often contain Cassia cinnamon instead of the more expensive true cinnamon. While I’ve been told by some that the flavor is the same, I can taste the difference very clearly. Most store-bought mixes also contain ginger, which my wife hates. To make me and my wife happy I’ve developed this recipe.
- 6 parts cinnamon (Ceylon)
- 1 part clove powder
- 1 part nutmeg powder
- 1 part cardamom powder
- 1 part white pepper powder
Other recipes I have found online, besides the evil ginger powder, mention the use of anise powder, coriander powder and black pepper powder. I have used black pepper instead of the white variety and I find the aftertaste of the cookies made with such mix is spicy; this is not a bad thing, but some people may not find it pleasing.
